【摘要】:1.1Thistestmethodcoverstheenergyconsumptionandcookingperformanceevaluationofconvectionovens.Theresultsofapplyingitcanbeusedbythefoodserviceoperatortoselectaconvectionovenandtounderstanditsenergyconsumption.1.2Thistestmethodappliestogeneralpurpose,full-size,andhalf-sizeconvectionovensusedprimarilyforbakingfoodproducts.Itisnotapplicabletoovensusedprimarilyforslowcookingandholdingfoodproduct,tolargeroll-inrack-typeovens,ortoovensdesignedspecificallytocookonlyonefoodproduct(forexample,specialtyovens).1.3Thistestmethodisintendedtobeappliedtoconvectionovensoperatedclosetoratedinputinthedryheatingmode,withthecirculatingfanoperatingatitsmaximumspeedandwithoutanyinjectionofmoistureintotheovencavity.1.4Theoven'senergyconsumptionandcookingperformanceareevaluatedinthetestmethodspecificallywithrespecttothefollowing:1.4.1Thermostatcalibration(10.2),1.4.2Energyinputrateandpreheatenergyconsumptionandtime(10.3),1.4.3Pilotenergyrate(ifapplicable)(10.4),1.4.4Idleenergyrate(10.5),1.4.5Cookingenergyefficiencyandproductioncapacity(10.6),1.4.6Cookinguniformity(10.7),and1.4.7Whitesheetcakebrowning(10.8).1.5Thevaluesstatedininch-poundunitsaretoberegardedasthestandard.Thevaluesgiveninparenthesesareforinformationonly.1.6Thisstandarddoesnotpurporttoaddressallofthesafetyconcerns,ifany,associatedwithitsuse.Itistheresponsibilityoftheuserofthisstandardtoestablishappropriatesafetyandhealthpracticesanddeterminetheapplicabilityofregulatorylimitationspriortouse.
